Dad and Rosie’s Baked Catfish with Rice

2 lbs. catfish

1/3 c chopped bell peppers

2 tbls parsley

2 tbls lemon juice

½ chopped onion

½ tsp ground cayenne

1 garlic clove (? Minced?)

1 28 oz can whole tomato chopped with juice

3 cups hot cooked rice

Heat oven to 450

Place fish onto oven before you start cooking the rice.

Cut fish into bite size servings

Mix together remaining ingredients except for rice. Pour over fish and bake uncovered for 30 to 45 mins. Soon tomato mixture over fish. Fish will lake with fork within done. Makes 3 cups cooked.
